Description

A hearty and comforting chili featuring sweet potatoes and lean turkey, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat a drizzle of olive oil in a large pot and sauté the chopped onion with the minced garlic until fragrant, about 2-3 minutes.
  2. Add the ground turkey to the pot. Cook until browned, breaking it up with a spoon.
  3. Stir in the diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes until the sweet potatoes are tender.
  5. Serve warm and enjoy!

Notes

For additional heat, add diced jalapeños or a dash of cayenne pepper. Adjust spices to suit your taste.
