- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat a drizzle of olive oil in a large pot and sauté the chopped onion with the minced garlic until fragrant, about 2-3 minutes.
- Add the ground turkey to the pot. Cook until browned, breaking it up with a spoon.
- Stir in the diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes until the sweet potatoes are tender.
- Serve warm and enjoy!
Notes
For additional heat, add diced jalapeños or a dash of cayenne pepper. Adjust spices to suit your taste.
