Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound sausage (Italian or breakfast)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup cream (or milk for a lighter version)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (like parsley or thyme)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Cook the sausage in a large skillet over medium heat until browned.
  3. Add the onion and garlic to the skillet, cooking until soft.
  4. Combine the sweet potatoes, sausage mixture, chicken broth, cream, smoked paprika, salt, and pepper in a bowl.
  5. Pour the mixture into a greased casserole dish.
  6. Sprinkle cheese on top if using.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes until tender and golden.
  9. Garnish with fresh herbs before serving.
