- 1/4 tsp ginger
- 1/4 cup brown sugar
- Oil for frying
- 1 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Combine the flour, sugar, and salt in a large bowl. Cut in the cold, cubed butter until it resembles coarse crumbs.
- Add cold water gradually, stirring until the dough just comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- Mix the cooked, mashed sweet potatoes with cinnamon, nutmeg, ginger, and brown sugar until creamy.
- Roll out the chilled pie dough on a floured surface and cut into circles. Place a spoonful of sweet potato mixture in the center and seal the edges.
- Heat oil in a pan over medium heat. Fry the hand pies until golden brown, about 3-4 minutes per side.
- Whisk together powdered sugar, milk, and vanilla until smooth, and drizzle over the warm pies before serving.
