  • 3 tbsp brown sugar
  • 3 tbsp water
  • 8 slices brioche bread (cut into thick 1-inch slabs)
  • 6 eggs
  • 1/3 cup milk (whole)
  • 1 tbsp sugar
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp lemon zest
  • 1 pinch salt

Instructions

  1. Begin by preparing the peach topping. In a skillet over medium heat, melt the butter. Then, add the sliced peaches, brown sugar, cinnamon, nutmeg, and water. Cook until the peaches soften and the sauce thickens, about 5-7 minutes. Remove from heat and set aside.
  2. Whisk together the eggs, milk, sugar, vanilla, cinnamon, lemon zest, and salt in a large bowl until well combined.
  3. Preheat a griddle or non-stick skillet over medium heat and lightly grease it with butter.
  4. Dip each slice of brioche into the egg mixture, allowing it to soak for a few seconds on each side.
  5. Transfer the soaked brioche slices to the preheated griddle. Cook until golden brown, approximately 3-4 minutes per side.
  6. Serve the French toast hot, topped with the peach mixture, and drizzle with any remaining sauce from the skillet.

Notes
