- 24 ounces frozen boneless wings or popcorn chicken
- 3/4 cup sweet chili sauce
- 1/3 cup pineapple juice
- 1 tablespoon minced jalapeño
- 1 (8 oz.) can pineapple slices, drained
- Sliced fresh jalapeño for garnish (optional)
Instructions
- Cook the frozen boneless wings or popcorn chicken according to the package directions.
- While the chicken is cooking, prepare the sauce by combining sweet chili sauce, pineapple juice, and minced jalapeño in a small saucepan. Bring to a boil, then reduce heat and simmer for about 5-10 minutes until thickened.
- Reserve about 3 tablespoons of the sauce for later.
- Brush the pineapple slices with the reserved sauce and grill them over medium-high heat for 1-2 minutes on each side until caramelized. Cut the grilled pineapple into chunks.
- Toss the cooked chicken with the remaining sauce until well coated.
- Top the chicken with the grilled pineapple chunks and sliced fresh jalapeño, if desired.
- Serve immediately and enjoy!
