Description
A quick and indulgent treat featuring chewy medjool dates stuffed with creamy peanut butter and drizzled with rich chocolate.

- 20 medjool dates
- ⅓ cup peanut butter (80g)
- ¼ cup coconut oil (50g)
- ¼ cup cacao or cocoa powder (15g)
- Sea salt flakes, to taste
- ½ cup dark chocolate or chocolate chips (70g)
Instructions
- Line a large baking tray with parchment paper to prevent the dates from sticking.
- Slice open each date lengthwise and remove the pit. Place the dates on the prepared tray.
- Spoon just under 1 teaspoon of peanut butter into the center of each date.
- Combine the coconut oil in a small bowl and microwave for 30 seconds until melted. Alternatively, melt it using a double boiler.
- Add cacao powder to the melted coconut oil and stir until fully combined. If you’re using pre-made chocolate, break it into pieces and microwave for 30 seconds until just melted.
- Allow the chocolate mixture to cool slightly before drizzling it over the stuffed dates. Get creative and dip the dates instead if you’re feeling adventurous!
- Optionally, sprinkle with sea salt for an extra flavor layer.
- Refrigerate the dates for about 20 minutes or until the chocolate has set.
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
