Description

A quick and indulgent treat featuring chewy medjool dates stuffed with creamy peanut butter and drizzled with rich chocolate.


Ingredients

  • 20 medjool dates
  • ⅓ cup peanut butter (80g)
  • ¼ cup coconut oil (50g)
  • ¼ cup cacao or cocoa powder (15g)
  • Sea salt flakes, to taste
  • ½ cup dark chocolate or chocolate chips (70g)

Instructions

  1. Line a large baking tray with parchment paper to prevent the dates from sticking.
  2. Slice open each date lengthwise and remove the pit. Place the dates on the prepared tray.
  3. Spoon just under 1 teaspoon of peanut butter into the center of each date.
  4. Combine the coconut oil in a small bowl and microwave for 30 seconds until melted. Alternatively, melt it using a double boiler.
  5. Add cacao powder to the melted coconut oil and stir until fully combined. If you’re using pre-made chocolate, break it into pieces and microwave for 30 seconds until just melted.
  6. Allow the chocolate mixture to cool slightly before drizzling it over the stuffed dates. Get creative and dip the dates instead if you’re feeling adventurous!
  7. Optionally, sprinkle with sea salt for an extra flavor layer.
  8. Refrigerate the dates for about 20 minutes or until the chocolate has set.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
