- 4 large banana peppers
- 1 pound Italian sausage
- 1 cup diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup cooked rice
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice the banana peppers in half lengthwise and remove the seeds.
- In a skillet over medium heat, cook the Italian sausage until it’s nicely browned.
- Once the sausage is ready, stir in the diced tomatoes, cooked rice, garlic powder, Italian seasoning, salt, and pepper.
- Stuff each pepper half with the flavorful sausage mixture and place them snugly in a baking dish.
- Generously sprinkle mozzarella and parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the peppers are tender.
- Serve hot and enjoy!
Notes
For a lower-carb option, swap out the rice for quinoa or cauliflower rice. These stuffed peppers can also be made ahead and refrigerated before baking.
