Description

Hearty and colorful stuffed banana peppers filled with savory Italian sausage, tomatoes, and creamy cheeses.


Ingredients

  • 4 large banana peppers
  • 1 pound Italian sausage
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice the banana peppers in half lengthwise and remove the seeds.
  3. In a skillet over medium heat, cook the Italian sausage until it’s nicely browned.
  4. Once the sausage is ready, stir in the diced tomatoes, cooked rice, garlic powder, Italian seasoning, salt, and pepper.
  5. Stuff each pepper half with the flavorful sausage mixture and place them snugly in a baking dish.
  6. Generously sprinkle mozzarella and parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the peppers are tender.
  8. Serve hot and enjoy!

Notes

For a lower-carb option, swap out the rice for quinoa or cauliflower rice. These stuffed peppers can also be made ahead and refrigerated before baking.
