Ingredients

  • 1 lb steak (flank or skirt)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup corn (grilled or canned)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled Cotija cheese
  • 1 lime (juiced)
  • 1 tbsp chili powder
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Rub the steak with olive oil, then season generously with salt and pepper. Grill for about 4-5 minutes on each side until it reaches your desired doneness. Let the steak rest for a few minutes before slicing it into thin strips.
  3. In a separate bowl, combine the corn, mayonnaise, sour cream, lime juice, and chili powder. Mix until all the ingredients are well incorporated.
  4. Add the corn tortillas to the grill. Warm them for about 30 seconds on each side until soft and pliable.
  5. To assemble the tacos, place a handful of sliced steak in each tortilla and top generously with the creamy corn mixture.
