- 1 tbsp olive oil
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup corn (grilled or canned)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled Cotija cheese
- 1 lime (juiced)
- 1 tbsp chili powder
- Fresh cilantro (for garnish)
Instructions
- Preheat your grill to medium-high heat.
- Rub the steak with olive oil, then season generously with salt and pepper. Grill for about 4-5 minutes on each side until it reaches your desired doneness. Let the steak rest for a few minutes before slicing it into thin strips.
- In a separate bowl, combine the corn, mayonnaise, sour cream, lime juice, and chili powder. Mix until all the ingredients are well incorporated.
- Add the corn tortillas to the grill. Warm them for about 30 seconds on each side until soft and pliable.
- To assemble the tacos, place a handful of sliced steak in each tortilla and top generously with the creamy corn mixture.
- Finish off with crumbled Cotija cheese and a sprinkle of fresh cilantro. Serve immediately for the best flavor experience!
