Description

A vibrant medley of flavors featuring grilled chicken, sweet corn, and crunchy cucumbers in a creamy, zesty sauce.


Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. In a large mixing bowl, combine the diced chicken, sweet corn, cucumber, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken and vegetable mixture.
  4. Gently toss everything together until all ingredients are well coated.
  5. Taste and adjust seasonings as necessary.
  6. If desired, sprinkle crumbled feta on top just before serving.

Notes

For a quick shortcut, use leftover rotisserie chicken. Add chopped jalapeños or hot sauce for extra zing.
