- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 cups strawberries, chopped
- 2 cups rhubarb, chopped
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine the flour, oats, brown sugar, baking soda, and salt in a mixing bowl. Add the softened butter and mix everything until it becomes crumbly.
- Press half of the crumb mixture firmly into the bottom of your prepared pan.
- Toss together the chopped strawberries, rhubarb, cornstarch, and lemon juice in another bowl. Spread this mixture evenly over the crumb base in the pan.
- Sprinkle the remaining crumb mixture evenly over the fruit filling.
- Bake in the preheated oven for about 30-35 minutes, or until the top is beautifully golden brown.
- Cool the bars before cutting into squares for serving.
Notes
For a gluten-free version, use gluten-free flour. For a dairy-free option, substitute coconut oil for the butter.
