Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 cups strawberries, chopped
  • 2 cups rhubarb, chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the flour, oats, brown sugar, baking soda, and salt in a mixing bowl. Add the softened butter and mix everything until it becomes crumbly.
  3. Press half of the crumb mixture firmly into the bottom of your prepared pan.
  4. Toss together the chopped strawberries, rhubarb, cornstarch, and lemon juice in another bowl. Spread this mixture evenly over the crumb base in the pan.
  5. Sprinkle the remaining crumb mixture evenly over the fruit filling.
  6. Bake in the preheated oven for about 30-35 minutes, or until the top is beautifully golden brown.
  7. Cool the bars before cutting into squares for serving.

For a gluten-free version, use gluten-free flour. For a dairy-free option, substitute coconut oil for the butter.
