Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped rhubarb, sliced strawberries, 1 cup of sugar, cornstarch, and vanilla extract in a mixing bowl. Stir until the fruits are well-coated.
- Transfer the fruit mixture into a greased baking dish, ensuring it’s evenly spread out.
- Mix the oats, flour, brown sugar, melted butter, and cinnamon until crumbly in another bowl.
- Spread the crumble mixture generously over the fruit layer, covering it fully.
- Bake the crisp for 35–40 minutes, or until the topping turns golden brown, and the fruit starts bubbling at the edges.
- Let it cool slightly before serving. It’s best enjoyed warm, especially when topped with a scoop of creamy ice cream.
Notes
For a healthier twist, use whole wheat flour or coconut sugar. Fresh produce yields the best flavor.
