Description

  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped rhubarb, sliced strawberries, 1 cup of sugar, cornstarch, and vanilla extract in a mixing bowl. Stir until the fruits are well-coated.
  3. Transfer the fruit mixture into a greased baking dish, ensuring it’s evenly spread out.
  4. Mix the oats, flour, brown sugar, melted butter, and cinnamon until crumbly in another bowl.
  5. Spread the crumble mixture generously over the fruit layer, covering it fully.
  6. Bake the crisp for 35–40 minutes, or until the topping turns golden brown, and the fruit starts bubbling at the edges.
  7. Let it cool slightly before serving. It’s best enjoyed warm, especially when topped with a scoop of creamy ice cream.

Notes

For a healthier twist, use whole wheat flour or coconut sugar. Fresh produce yields the best flavor.
