Description

Ingredients

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup heavy cream
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • Optional: additional sugar for sprinkling

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream, chopped strawberries, lemon zest, and lemon juice until just combined – be careful not to overmix!
  5. Turn the dough onto a floured surface and gently knead a few times to bring it together. Pat the dough into a circle about 1 inch thick.
  6. Cut the dough into triangles or rounds and place them onto the prepared baking sheet.
  7. Sprinkle additional sugar on top if desired.
  8. Bake for 15-20 minutes or until the scones are golden brown.
  9. Allow them to cool slightly before serving and enjoy!

Notes

For a lighter version, substitute heavy cream with half-and-half. Chill butter before cutting it to ensure a flaky texture.
