- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup heavy cream
- 1 cup fresh strawberries, chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- Optional: additional sugar for sprinkling
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt until well combined.
- Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the heavy cream, chopped strawberries, lemon zest, and lemon juice until just combined – be careful not to overmix!
- Turn the dough onto a floured surface and gently knead a few times to bring it together. Pat the dough into a circle about 1 inch thick.
- Cut the dough into triangles or rounds and place them onto the prepared baking sheet.
- Sprinkle additional sugar on top if desired.
- Bake for 15-20 minutes or until the scones are golden brown.
- Allow them to cool slightly before serving and enjoy!
Notes
For a lighter version, substitute heavy cream with half-and-half. Chill butter before cutting it to ensure a flaky texture.
