- 8 ounces of cream cheese (1 block, room temperature)
- 1/2 cup of butter (at room temperature)
- 1 large egg (at room temperature)
- 1 box (15.25 ounces) of strawberry cake mix
- 1/4 cup of powdered sugar
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- Cream together the butter and cream cheese until smooth and fluffy in a stand mixer.
- Add the egg into the mixture and combine thoroughly.
- Reduce the mixer speed to low, and gradually incorporate the strawberry cake mix.
- Pour the powdered sugar into a separate bowl.
- Using a tablespoon-sized scoop, portion out the dough and roll it into 1-inch balls. Roll each ball in the powdered sugar to coat.
- Place the dough balls about 2 inches apart on your prepared baking sheets.
- Bake the cookies for 11-13 minutes until just set in the center with a very light golden color.
- Cool your cookies on a cooling rack before serving.
Notes
For best results, ensure your cream cheese and butter are at room temperature. Consider adding a sprinkle of sea salt on top before baking for an enhanced flavor.
