Description

Ingredients

  • 8 ounces of cream cheese (1 block, room temperature)
  • 1/2 cup of butter (at room temperature)
  • 1 large egg (at room temperature)
  • 1 box (15.25 ounces) of strawberry cake mix
  • 1/4 cup of powdered sugar

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. Cream together the butter and cream cheese until smooth and fluffy in a stand mixer.
  3. Add the egg into the mixture and combine thoroughly.
  4. Reduce the mixer speed to low, and gradually incorporate the strawberry cake mix.
  5. Pour the powdered sugar into a separate bowl.
  6. Using a tablespoon-sized scoop, portion out the dough and roll it into 1-inch balls. Roll each ball in the powdered sugar to coat.
  7. Place the dough balls about 2 inches apart on your prepared baking sheets.
  8. Bake the cookies for 11-13 minutes until just set in the center with a very light golden color.
  9. Cool your cookies on a cooling rack before serving.

Notes

For best results, ensure your cream cheese and butter are at room temperature. Consider adding a sprinkle of sea salt on top before baking for an enhanced flavor.
