Description

Light and fluffy French crullers topped with a fresh strawberry glaze, perfect for any occasion.


Ingredients

  • ½ cup Water
  • ½ cup Whole Milk
  • ½ cup Unsalted Butter
  • 2 tbsp Granulated Sugar
  • ½ tsp Salt
  • 1 ⅓ cup Bread Flour
  • 4 Large Eggs
  • Vegetable or Canola Oil (for frying)
  • 2 cups Powdered Sugar (sifted)
  • ¼ cup Fresh Strawberries (cut and mashed or pureed)
  • 34 tbsp Whole Milk
  • ½ cup Freeze-Dried Strawberries (processed into fine strawberry bits)
  • ¼ cup Granulated Sugar

Instructions

  1. Combine water, whole milk, unsalted butter, granulated sugar, and salt in a medium saucepan. Bring to a simmer over medium heat.
  2. Remove from heat and gradually stir in bread flour until smooth.
  3. Cool slightly, then add eggs one at a time, beating until well combined.
  4. Preheat oil in deep fryer or skillet to 350°F (175°C).
  5. Pipe the dough into desired cruller shapes into hot oil.
  6. Fry until golden brown, about 4-5 minutes per side. Drain on paper towels.
  7. Whisk together powdered sugar, fresh strawberry puree, and whole milk until smooth to make glaze.
  8. Dip cooled cruller tops into glaze and sprinkle with freeze-dried strawberry bits.

Notes

Serve fresh for the best taste. Store leftovers in an airtight container for up to two days at room temperature or up to a week in the refrigerator.
