Light and fluffy French crullers topped with a fresh strawberry glaze, perfect for any occasion.
Ingredients

- ½ cup Water
- ½ cup Whole Milk
- ½ cup Unsalted Butter
- 2 tbsp Granulated Sugar
- ½ tsp Salt
- 1 ⅓ cup Bread Flour
- 4 Large Eggs
- Vegetable or Canola Oil (for frying)
- 2 cups Powdered Sugar (sifted)
- ¼ cup Fresh Strawberries (cut and mashed or pureed)
- 3–4 tbsp Whole Milk
- ½ cup Freeze-Dried Strawberries (processed into fine strawberry bits)
- ¼ cup Granulated Sugar
Instructions
- Combine water, whole milk, unsalted butter, granulated sugar, and salt in a medium saucepan. Bring to a simmer over medium heat.
- Remove from heat and gradually stir in bread flour until smooth.
- Cool slightly, then add eggs one at a time, beating until well combined.
- Preheat oil in deep fryer or skillet to 350°F (175°C).
- Pipe the dough into desired cruller shapes into hot oil.
- Fry until golden brown, about 4-5 minutes per side. Drain on paper towels.
- Whisk together powdered sugar, fresh strawberry puree, and whole milk until smooth to make glaze.
- Dip cooled cruller tops into glaze and sprinkle with freeze-dried strawberry bits.
Notes
Serve fresh for the best taste. Store leftovers in an airtight container for up to two days at room temperature or up to a week in the refrigerator.
