Description
A delightful fusion of creamy cheesecake flavor combined with the health benefits of chia seeds.
Ingredients
Scale
- 3 tablespoons chia seeds
- 1 cup fresh strawberries (washed and hulled)
- 4 tablespoons cream cheese (softened)
- 1 cup milk (almond, coconut, or regular)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Place 3 tablespoons of chia seeds into your preferred bowl or jar.
- Wash and hull 1 cup of fresh strawberries, then chop them into small, bite-sized pieces.
- Add the 4 tablespoons of softened cream cheese to the bowl with the chia seeds.
- Pour in 1 cup of your chosen milk—almond, coconut, or regular milk works wonderfully.
- Stir in 2 tablespoons of honey or maple syrup for natural sweetness.
- Add 1 teaspoon of vanilla extract to infuse aromatic flavors.
- Mix all the ingredients thoroughly, ensuring that the chia seeds are evenly distributed and the cream cheese is fully combined.
- Allow the mixture to sit for just a few minutes. This helps the chia seeds start to absorb the liquid.
- Stir once more to prevent any clumping and ensure a smooth texture.
- Cover the container and refrigerate for at least 240 minutes or, ideally, overnight, giving it ample time to thicken into a delicious pudding.
Notes
For a vegan version, use dairy-free cream cheese and your choice of plant-based milk and sweetener.
