Description

A delightful fusion of creamy cheesecake flavor combined with the health benefits of chia seeds.

Ingredients

Scale
  • 3 tablespoons chia seeds
  • 1 cup fresh strawberries (washed and hulled)
  • 4 tablespoons cream cheese (softened)
  • 1 cup milk (almond, coconut, or regular)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Place 3 tablespoons of chia seeds into your preferred bowl or jar.
  2. Wash and hull 1 cup of fresh strawberries, then chop them into small, bite-sized pieces.
  3. Add the 4 tablespoons of softened cream cheese to the bowl with the chia seeds.
  4. Pour in 1 cup of your chosen milk—almond, coconut, or regular milk works wonderfully.
  5. Stir in 2 tablespoons of honey or maple syrup for natural sweetness.
  6. Add 1 teaspoon of vanilla extract to infuse aromatic flavors.
  7. Mix all the ingredients thoroughly, ensuring that the chia seeds are evenly distributed and the cream cheese is fully combined.
  8. Allow the mixture to sit for just a few minutes. This helps the chia seeds start to absorb the liquid.
  9. Stir once more to prevent any clumping and ensure a smooth texture.
  10. Cover the container and refrigerate for at least 240 minutes or, ideally, overnight, giving it ample time to thicken into a delicious pudding.

Notes

For a vegan version, use dairy-free cream cheese and your choice of plant-based milk and sweetener.
