  • 16 ounces (452g) cream cheese (room temperature)
  • 3 cups (720ml) heavy whipping cream (cold)
  • 1 ¼ cups (144g) powdered sugar
  • 1 tablespoon vanilla extract
  • 610 strawberries (sliced)
  • 3 strawberries (cut in half)

Instructions

  1. Make the Cheesecake Layer: Start by beating the cream cheese until smooth. Gradually add sugar, followed by flour, sour cream, and vanilla. Mix well, then incorporate the eggs one at a time, ensuring everything is blended smoothly. Pour the filling into a prepared springform pan and bake until set. Allow it to cool completely.
  2. Make the Cake Layers: In a large bowl, blend the butter and sugar until fluffy. Add sour cream, strawberry extract, milk, and strawberry puree while combining dry ingredients in a separate bowl. Gradually mix the dry and wet ingredients while adding food coloring until you achieve a pretty pink batter. Bake in two prepared 9-inch round pans and let them cool.
  3. Prepare the Frosting: Beat chilled heavy whipping cream until soft peaks form, then gradually add powdered sugar and vanilla until firm.
