Ingredients

  • 3 cups all-purpose flour

  • 1 1/2 teaspoons kosher salt
  • 1/4 cup room temperature water, plus extra as necessary

Instructions

  1. Prepare the Spinach: In a heatproof bowl, pour the boiling water over the spinach. Let it sit for about 2 minutes until the spinach is bright green and wilted. Drain the water using a strainer.
  2. Mix the Dough: In a food processor, combine the flour, salt, and butter (or olive oil) and pulse until mixed. Add the wilted spinach and process until fully combined, scraping down the sides as needed. Gradually add the room temperature water until a cohesive dough forms. Adjust with more flour or water if the dough feels too crumbly or sticky.
  3. Knead the Dough: Transfer the dough to a clean surface, form it into a ball, and knead for about 30 seconds until smooth. Cover it with an inverted bowl and let it rest for 20 minutes.
  4. Shape the Tortillas: Divide the dough into 10 equal portions and flatten each into a disk. On a flat, unfloured surface, roll each portion into thin circlesโ€”aim for about 8 inches in diameter.
  5. Cook: Heat a dry skillet over medium heat. Cook each tortilla for about 30 seconds on one side, flip and cook for another 15-30 seconds until light brown spots appear. Place cooked tortillas on a plate covered with a clean towel to keep them warm.
  6. Storage: To store, wrap tortillas in a towel and place in a sealed plastic bag in the fridge. Reheat or let come to room temperature before serving.
