Ingredients

- 1 can (15 oz) white beans, drained and rinsed
- 1 cup fresh spinach, chopped
- 1/2 cup artichoke hearts, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 slices of whole grain bread
- Optional: cheese slices or vegan cheese
Instructions
- Mash the white beans with a fork until mostly smooth, leaving a few chunks for texture.
- Stir in the chopped spinach, artichoke hearts, minced garlic, olive oil, oregano, salt, and pepper. Mix until well combined.
- Spread the mixture evenly onto two slices of whole grain bread, then top with the remaining slices.
- Heat a skillet over medium heat. Toast the sandwiches until golden brown on both sides, about 3-4 minutes per side.
- Serve immediately and enjoy your flavorful creation!
Notes
For extra flavor, sauté garlic in olive oil before mixing. Don’t worry about lumps in beans for added texture.
