Description

A delightful and nutritious sandwich filled with creamy white beans, fresh spinach, and tangy artichokes.


Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup fresh spinach, chopped
  • 1/2 cup artichoke hearts, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 slices of whole grain bread
  • Optional: cheese slices or vegan cheese

Instructions

  1. Mash the white beans with a fork until mostly smooth, leaving a few chunks for texture.
  2. Stir in the chopped spinach, artichoke hearts, minced garlic, olive oil, oregano, salt, and pepper. Mix until well combined.
  3. Spread the mixture evenly onto two slices of whole grain bread, then top with the remaining slices.
  4. Heat a skillet over medium heat. Toast the sandwiches until golden brown on both sides, about 3-4 minutes per side.
  5. Serve immediately and enjoy your flavorful creation!

Notes

For extra flavor, sauté garlic in olive oil before mixing. Don’t worry about lumps in beans for added texture.
