Description

A savory, creamy slice of Spinach Artichoke Crustless Quiche, perfect for brunch or quick dinners.

Ingredients

Scale
  • 6 large eggs
  • 1 cup milk
  • 1 cup fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup shredded cheese (mozzarella, cheddar, or a mix)
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil or butter for greasing the pan

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Grease a 9-inch pie dish or quiche pan with olive oil or butter.
  3. Sautรฉ the diced onion and minced garlic over medium heat until softened and fragrant.
  4. Whisk together the eggs, milk, salt, and pepper until well combined.
  5. Stir in the sautรฉed onion and garlic, along with the chopped spinach, artichoke hearts, and shredded cheese.
  6. Pour this mixture into the prepared dish.
  7. Bake for 35-40 minutes or until the eggs are set and the top is golden.
  8. Allow to cool slightly before slicing and serving.

Notes

For best results, drain artichokes well; extra moisture can lead to a soggy quiche. Serve warm with salad or roasted potatoes.
