Ingredients

- 1 teaspoon chili paste (or to taste)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions (for garnish)
- Protein of choice (optional, e.g., chicken, tofu)
Instructions
- Spiralize the zucchini using a spiralizer to create long, noodle-like strands.
- Heat the olive oil over medium heat in a large skillet.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the zucchini noodles and cook for about 3-4 minutes, allowing them to soften slightly.
- Pour in the soy sauce, chili paste, and sesame oil. Mix and cook for an additional 1-2 minutes.
- Season with salt and pepper to taste. If adding protein, do so now!
- Garnish with chopped green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water to prevent drying out. Freezing is possible for up to a month but may change texture.
