Ingredients

  • 1 tablespoon soy sauce
  • 1 teaspoon chili paste (or to taste)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Protein of choice (optional, e.g., chicken, tofu)

Instructions

  1. Spiralize the zucchini using a spiralizer to create long, noodle-like strands.
  2. Heat the olive oil over medium heat in a large skillet.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Stir in the zucchini noodles and cook for about 3-4 minutes, allowing them to soften slightly.
  5. Pour in the soy sauce, chili paste, and sesame oil. Mix and cook for an additional 1-2 minutes.
  6. Season with salt and pepper to taste. If adding protein, do so now!
  7. Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water to prevent drying out. Freezing is possible for up to a month but may change texture.
