Description

Deliciously fluffy muffins infused with the cozy flavors of spiced pears, perfect for breakfast or a sweet treat any time of day.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups peeled and diced pears

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl.
  3. Mix the melted butter, eggs, and milk in a separate bowl until well combined.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix. Fold in the diced pears.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to substitute pears with apples or bananas for a different flavor. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
