Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, chopped
- 2 apples, peeled and chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is softened and fragrant.
- Stir in the chopped carrots and apples, cooking for about five minutes.
- Pour in the vegetable broth and add the cumin, cinnamon, salt, and pepper. Bring this mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 25 to 30 minutes, or until the carrots and apples are tender.
- Use an immersion blender to puree the soup until it reaches a smooth consistency. If you don’t have one, carefully blend in batches in a countertop blender.
- If desired, stir in the heavy cream just before serving.
- Serve hot and enjoy your delightful creation!
