Description

A warm and comforting soup with a delightful blend of carrots, apples, and spices that is perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, chopped
  • 2 apples, peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is softened and fragrant.
  3. Stir in the chopped carrots and apples, cooking for about five minutes.
  4. Pour in the vegetable broth and add the cumin, cinnamon, salt, and pepper. Bring this mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for 25 to 30 minutes, or until the carrots and apples are tender.
  6. Use an immersion blender to puree the soup until it reaches a smooth consistency. If you don’t have one, carefully blend in batches in a countertop blender.
  7. If desired, stir in the heavy cream just before serving.
  8. Serve hot and enjoy your delightful creation!
