- 3 cups sweet potatoes, peeled and cubed

Instructions
- Cook the Meat and Veggies: In a large skillet over medium heat, add the ground beef, diced onion, red bell pepper, and minced garlic. Break up the beef into large chunks and brown it until fully cooked, draining off any excess fat.
- Add Spices: Stir in the chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes. Cook for about one minute, allowing the spices to be fragrant.
- Incorporate the Sweet Potatoes: Add in the cubed sweet potatoes, black beans, and water. Stir everything together to combine well.
- Simmer: Reduce the heat to medium-low, cover the skillet, and let it cook for 15-20 minutes, or until the sweet potatoes are fork-tender.
- Reduce Liquid: After the sweet potatoes are tender, remove the lid and cook for another 2-3 minutes to evaporate any remaining liquid.
- Cheesy Finish: Remove the pan from heat and add the cheese on top. Cover with the lid again and let it sit for about 5 minutes, or until the cheese has melted beautifully.
- Serve: Dish it out with your favorite toppings!
