Description

A refreshing and vibrant salad combining chickpeas, black beans, and colorful vegetables tossed in a zesty lime dressing.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, black beans, corn, diced red bell pepper, diced avocado, red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine all the ingredients.
  4. Serve immediately, or refrigerate for later enjoyment.

Notes

Add avocado fresh when serving to prevent browning. Store leftovers in an airtight container for up to 3 days.
