A refreshing and vibrant salad combining chickpeas, black beans, and colorful vegetables tossed in a zesty lime dressing.
Ingredients

- 1 can chickpeas, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, black beans, corn, diced red bell pepper, diced avocado, red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Serve immediately, or refrigerate for later enjoyment.
Notes
Add avocado fresh when serving to prevent browning. Store leftovers in an airtight container for up to 3 days.
