Instructions
- Preheat your oven to 350°F (175°C).
- Combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg in a large bowl, mixing well until combined.
- Pour the sweet potato mixture into a greased casserole dish, spreading it evenly.
- Top with mini marshmallows and chopped pecans. Drizzle with additional maple syrup and melted vegan butter if using.
- Bake in the preheated oven for 30-35 minutes, or until bubbly and the marshmallows turn golden brown.
- Allow to cool for a few minutes before serving to let the flavors settle.
