  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cubed
  • 1/4 cup maple syrup
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Combine the sourdough discard, flour, baking soda, baking powder, pumpkin spice, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the pumpkin puree, maple syrup, milk, and vanilla extract until just combined.
  5. Transfer the dough to a floured surface and knead gently a few times.
  6. Pat the dough into a circle about 1 inch thick and cut into wedges.
  7. Place the wedges on a parchment-lined baking sheet.
  8. Bake for 15-20 minutes or until lightly browned.
  9. Allow to cool slightly before drizzling with a maple glaze if desired.
