  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup pepperoni (chopped)
  • 1 tablespoon Italian seasoning
  • Olive oil (for brushing)
  • Marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine your sourdough discard, flour, salt, and garlic powder in a mixing bowl. Mix until it forms a workable dough.
  3. Knead the dough on a floured surface until it turns smooth and elastic, about 2-3 minutes.
  4. Roll out the dough into a rectangle, aiming for roughly 1/4 inch thick.
  5. Sprinkle mozzarella cheese, chopped pepperoni, and Italian seasoning evenly over the dough.
  6. Roll the dough tightly into a log shape and slice it into 1-inch pieces.
  7. Arrange the rolls on a parchment-lined baking sheet and brush the tops lightly with olive oil for a golden finish.
