  • 1 lb. ground beef
  • 1 yellow onion, finely chopped
  • 2 medium cloves garlic, minced
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes, drained
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • Red pepper flakes to taste
  • Salt and pepper to taste
  • 8 oz. sour cream
  • 8 oz. small curd cottage cheese
  • 1/2 cup Parmesan cheese, shredded
  • 2 cups cheddar cheese, shredded
  • Fresh parsley to garnish

Instructions

  1. Cook the noodles: Bring a pot of salted water to a boil. Add the egg noodles and cook according to package directions until they are al dente. Once done, rinse them in cold water to halt the cooking process, then splash with olive oil to prevent sticking.
  2. Brown the beef: In a skillet over medium heat, brown the ground beef while breaking it into small pieces. Drain any excess fat to keep the dish from becoming greasy.
  3. Sauté vegetables: Add the finely chopped onion and minced garlic to the skillet. Sauté until fragrant, about 3 minutes.
  4. Create the sauce: Pour in the tomato sauce and diced tomatoes. Stir in the Worcestershire sauce, smoked paprika, and season with red pepper flakes, salt, and pepper to taste. Let the sauce simmer for about 5 minutes, allowing it to thicken.
  5. Mix the cheese and noodles: In a large mixing bowl, combine the cooked egg noodles, sour cream, cottage cheese, and Parmesan cheese. Mix until everything is well incorporated.
  6. Layer the casserole: Spoon half of the creamy noodle mixture into a 9×13 casserole dish. Layer half of the beef mixture followed by half of the cheddar cheese. Repeat the layers again, finishing with a generous layer of cheddar cheese on top.
  7. Bake: Place the casserole, uncovered, in a preheated oven at 350°F (175°C) for 25-30 minutes or until the cheese is melted and bubbly.
  8. Garnish and serve: Top with freshly chopped parsley before serving hot.
