Ingredients

- 1/2 cup Peanut Butter
- 1/2 cup Butter (softened)
- 1/3 cup Brown Sugar
- 1/3 cup White Sugar
- 1 1/4 cups All-purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Egg
Instructions
- Cream together the brown sugar, white sugar, peanut butter, and softened butter until smooth.
- Beat in the egg and vanilla extract until fully integrated.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Add the dry ingredients to the wet mixture and mix until well combined.
- Transfer the dough to a clean bowl, cover, and chill in the fridge for one hour.
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll about 1-1/2 tablespoons of dough into balls and arrange on the baking sheet.
- Press each ball down in a crisscross pattern using the back of a fork.
- Bake for 9-11 minutes or until the edges are golden brown.
- Transfer cookies to a cooling rack and enjoy!
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
