Description

Delicious carrot cake cookies that combine warming spices and the goodness of carrots into a chewy treat perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly mixed in a medium bowl.
  3. Beat together the softened butter, brown sugar, and granulated sugar until creamy and light in a large bowl.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. Stir the flour mixture into the wet ingredients gradually, mixing just until incorporated.
  6. Fold in the grated carrots and optionally add raisins or walnuts.
  7. Drop spoonfuls of dough onto a lined baking sheet and flatten them slightly.
  8. Bake for 10-12 minutes or until the edges are lightly golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For a healthier option, substitute half the butter with applesauce. To keep cookies fresh, store in an airtight container at room temperature.
