- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly mixed in a medium bowl.
- Beat together the softened butter, brown sugar, and granulated sugar until creamy and light in a large bowl.
- Add in the egg and vanilla extract, mixing until well combined.
- Stir the flour mixture into the wet ingredients gradually, mixing just until incorporated.
- Fold in the grated carrots and optionally add raisins or walnuts.
- Drop spoonfuls of dough onto a lined baking sheet and flatten them slightly.
- Bake for 10-12 minutes or until the edges are lightly golden brown.
- Cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
For a healthier option, substitute half the butter with applesauce. To keep cookies fresh, store in an airtight container at room temperature.
