Description

A cozy and delicious breakfast casserole made in a slow cooker, perfect for lazy mornings and family gatherings.

Ingredients

Scale
  • 24 ounces stale Brioche bread (around 1.5 loaves; feel free to substitute with French, Challah, or Texas toast)
  • ½ cup pecans (chopped, optional)
  • 8 large eggs
  • 3 cups whole milk
  • ¼ cup real maple syrup
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup butter (sliced)
  • ½ cup packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon

Instructions

  1. Grease your slow cooker insert with nonstick cooking spray or butter.
  2. Cut the loaf of bread into 1-inch cubes and layer them in the slow cooker, adding chopped pecans if desired.
  3. Whisk together the eggs, milk, maple syrup, vanilla extract, salt, cinnamon, and nutmeg in a large mixing bowl.
  4. Pour the egg mixture over the bread, stirring gently to ensure each piece is coated.
  5. Allow it to sit for a couple of hours if time permits.
  6. Mix the brown sugar and additional cinnamon in a small bowl.
  7. Sprinkle the brown sugar mixture over the soaked bread and add butter slices on top.
  8. Cover the slow cooker and cook on HIGH for 2 to 2.5 hours, or on LOW for 3 to 4 hours.
  9. Serve with warm maple syrup, powdered sugar, or fresh fruits.

Notes

For best results, use stale bread and get creative with toppings like nuts or fruits.
