- 2 pounds boneless, skinless chicken thighs
- 1 can (14 ounces) diced tomatoes
- 2–3 chipotle peppers in adobo sauce
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Tortillas for serving
- Fresh cilantro for garnish
Instructions
- Start by placing the chicken thighs directly into the slow cooker.
- In a blender, combine the diced tomatoes, chipotle peppers, garlic, cumin, oregano, and a pinch of salt and pepper. Blend until smooth.
- Pour the sauce over the chicken, ensuring it’s well coated. Add the sliced onions on top.
- Cover and cook on low for 360 minutes or high for 240 minutes until the chicken is fork-tender.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Serve in warm tortillas, garnished with fresh cilantro.
Notes
Feel free to adjust the spice level by modifying the number of chipotle peppers used.
