Description

A comforting crock pot jambalaya packed with chicken, sausage, and vegetables, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 lb chicken, diced
  • 1 lb sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup long grain rice
  • 3 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Combine the diced chicken, sliced sausage, chopped onion, bell pepper, minced garlic, and diced tomatoes in your crock pot.
  2. Add the long grain rice and pour in the chicken broth.
  3. Sprinkle Cajun seasoning, then add salt and pepper to taste.
  4. Stir well until all ingredients are well mixed.
  5. Cover the crock pot and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
  6. Serve hot and garnish with chopped green onions for an extra burst of flavor.
