- 1 lb sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup long grain rice
- 3 cups chicken broth
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Combine the diced chicken, sliced sausage, chopped onion, bell pepper, minced garlic, and diced tomatoes in your crock pot.
- Add the long grain rice and pour in the chicken broth.
- Sprinkle Cajun seasoning, then add salt and pepper to taste.
- Stir well until all ingredients are well mixed.
- Cover the crock pot and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
- Serve hot and garnish with chopped green onions for an extra burst of flavor.
