- 2 medium zucchinis, sliced
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced zucchini and sauté for about 5 minutes, stirring occasionally until it starts to soften.
- Toss in the sliced mushrooms and minced garlic.
- Season with salt and pepper to your taste.
- Continue cooking for an additional 5-7 minutes until all the vegetables are tender.
- Remove from heat and, if desired, garnish with fresh parsley. Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months. Avoid overcrowding the skillet for even cooking.
