Description

A quick and vibrant vegetable side dish that pairs perfectly with any main course.


Ingredients

  • 2 medium zucchinis, sliced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced zucchini and sauté for about 5 minutes, stirring occasionally until it starts to soften.
  3. Toss in the sliced mushrooms and minced garlic.
  4. Season with salt and pepper to your taste.
  5. Continue cooking for an additional 5-7 minutes until all the vegetables are tender.
  6. Remove from heat and, if desired, garnish with fresh parsley. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months. Avoid overcrowding the skillet for even cooking.
