Description

Ingredients

  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese
  • 1/4 cup chopped cilantro or sliced green onions

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Stir in the frozen corn. Cook just until heated through, stirring often to prevent sticking.
  3. Add the mayonnaise, sour cream, lime juice, cumin, and chili powder. Stir well to combine.
  4. Sprinkle half of the cotija cheese into the skillet, stirring until melted and creamy.
  5. Top with the remaining cheese, and garnish with chili powder and your choice of cilantro or green onions.

Notes

For added brightness, consider using lime zest or swapping cotija cheese for feta. Serve warm with grilled meats or in tortillas for a fun twist.
