Description

A quick and flavorful dish featuring shrimp sautéed in garlic butter with vibrant vegetables, perfect for a weeknight dinner.


Ingredients

  • 1.1 lb shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 1 tsp olive oil
  • 2 tbsp garlic, freshly minced
  • 1 tsp ground cumin
  • 1 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • 1 medium zucchini, sliced into 1/4-inch thick half-moons
  • 1.5 cups bell peppers, cut into 1-inch pieces
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • Salt to taste
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.
  2. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  3. Toss in the shrimp, cumin, red pepper flakes, smoked paprika, salt, and black pepper. Cook for 3-4 minutes, stirring frequently, until the shrimp begin to turn pink.
  4. Add the zucchini and bell peppers to the skillet. Cook for another 4-5 minutes, until the vegetables are tender yet still vibrant.
  5. Remove the skillet from heat. Stir in the fresh lemon juice and lemon zest, then sprinkle with chopped parsley.
  6. Serve immediately, garnished with additional parsley if desired.
