- 1 lb lobster meat, cooked and chopped
- 2 cups seafood stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped tomatoes (fresh or canned)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil: In a large pot, warm 2 tablespoons of olive oil over medium heat.
- Sauté the onion and garlic: Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, which should take about 3-4 minutes.
- Add the tomatoes: Stir in the chopped tomatoes and let them cook for 2-3 minutes, integrating their flavors.
- Pour in the seafood stock: Add the seafood stock and bring it to a gentle simmer.
- Cook the seafood: Toss in the shrimp and lobster meat. Cook for approximately 5 minutes, or until the shrimp turn pink and are cooked through.
- Add the cream: Stir in the heavy cream, seasoning with salt and pepper to taste.
- Final simmer: Allow it to simmer for another 2-3 minutes to meld the flavors.
- Garnish and serve: Serve hot, garnished with fresh parsley.
