Ingredients

  • 1 lb lobster meat, cooked and chopped
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped tomatoes (fresh or canned)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil: In a large pot, warm 2 tablespoons of olive oil over medium heat.
  2. Sauté the onion and garlic: Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, which should take about 3-4 minutes.
  3. Add the tomatoes: Stir in the chopped tomatoes and let them cook for 2-3 minutes, integrating their flavors.
  4. Pour in the seafood stock: Add the seafood stock and bring it to a gentle simmer.
  5. Cook the seafood: Toss in the shrimp and lobster meat. Cook for approximately 5 minutes, or until the shrimp turn pink and are cooked through.
  6. Add the cream: Stir in the heavy cream, seasoning with salt and pepper to taste.
  7. Final simmer: Allow it to simmer for another 2-3 minutes to meld the flavors.
  8. Garnish and serve: Serve hot, garnished with fresh parsley.
