Ingredients

  • 1 large egg, beaten
  • 1 tablespoon lime juice
  • 1 avocado, mashed
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, minced (optional)
  • Burger buns (your choice)
  • Lettuce and tomato, for serving

Instructions

  1. Chop the shrimp: Add the peeled and deveined shrimp to a food processor. Pulse until the shrimp is coarsely chopped, then transfer to a mixing bowl.
  2. Mix all ingredients: To the bowl, add breadcrumbs, cilantro, minced garlic, cumin, paprika, salt, pepper, the beaten egg, and lime juice. Mix until everything is well incorporated.
  3. Shape the patties: Divide the mixture into equal portions and form them into burger patties about 1 inch thick.
  4. Preheat your grill or pan: Heat your grill or skillet over medium heat, lightly greased to avoid sticking.
  5. Cook the patties: Place the patties on your hot grill or skillet. Cook each side for about 4-5 minutes until they’re golden brown and fully cooked.
  6. Prepare the guacamole: While cooking, mash the avocado in a bowl. Stir in red onion, jalapeño (if using), salt, and lime juice.
  7. Assemble the burgers: If desired, toast your burger buns. Layer each bun with a shrimp patty and generously top with guacamole.
