- 1 pound large shrimp, peeled and deveined
- 1 teaspoon Old Bay seasoning
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 cup baby potatoes, halved
- 1 ear corn, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Prepare the skewers: If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning. Preheat your grill to medium heat.
- Marinate the shrimp: In a bowl, combine the shrimp with Old Bay seasoning, lemon juice, and olive oil. Mix well and let it marinate for 15 minutes while you prep the veggies.
- Assemble the kabobs: Thread the marinated shrimp, halved baby potatoes, corn chunks, and bell pepper pieces onto the skewers. Alternate the ingredients for a colorful presentation. Season with salt and pepper.
- Grill the kabobs: Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp becomes opaque and the vegetables are tender.
- Serve and enjoy!: Serve it hot off the grill, paired with lemon wedges or your favorite dipping sauce.
Notes
For a spicy kick, add cayenne pepper to the marinade. You can substitute shrimp with chicken or tofu if desired.
