Description

Fresh and colorful shrimp kabobs perfect for summer grilling with a delightful blend of shrimp, veggies, and baby potatoes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon Old Bay seasoning
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 cup baby potatoes, halved
  • 1 ear corn, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Prepare the skewers: If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning. Preheat your grill to medium heat.
  2. Marinate the shrimp: In a bowl, combine the shrimp with Old Bay seasoning, lemon juice, and olive oil. Mix well and let it marinate for 15 minutes while you prep the veggies.
  3. Assemble the kabobs: Thread the marinated shrimp, halved baby potatoes, corn chunks, and bell pepper pieces onto the skewers. Alternate the ingredients for a colorful presentation. Season with salt and pepper.
  4. Grill the kabobs: Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp becomes opaque and the vegetables are tender.
  5. Serve and enjoy!: Serve it hot off the grill, paired with lemon wedges or your favorite dipping sauce.

Notes

For a spicy kick, add cayenne pepper to the marinade. You can substitute shrimp with chicken or tofu if desired.
