- 1 pound shrimp, peeled and deveined
- 1 pound andouille sausage, sliced
- 1 pound baby potatoes, halved
- 2 ears of corn, cut into pieces
- 4 tablespoons olive oil
- 1 tablespoon Old Bay seasoning
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Take a large sheet pan and combine the shrimp, sausage, potatoes, and corn.
- Drizzle everything with olive oil and shake on some Old Bay seasoning, salt, and pepper.
- Use your hands to toss all ingredients together until everything is well coated.
- Spread the mixture out in an even layer on the pan.
- Bake for 20-25 minutes or until the shrimp are pink and fully cooked and the potatoes are tender.
- Serve hot with lemon wedges on the side for an extra zest.
Notes
Don’t overcook the shrimp and feel free to mix in other vegetables for added nutrition.
