Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 0.5 tsp ground turmeric
  • 0.5 tsp ground cinnamon
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley, for garnish

Instructions

  1. Start by combining olive oil, lemon juice, minced garlic, and all the spices in a large mixing bowl. Whisk them together until you get a smooth, fragrant paste.
  2. Pat the chicken thighs dry with paper towels.
  3. Add the chicken thighs to the marinade and massage the spice mix all over each piece.
  4. You have the option to cook right away or cover and refrigerate for 30 minutes up to 8 hours.
  5. When ready to cook, heat a skillet over medium-high heat until shimmering.
  6. Carefully add the chicken thighs in a single layer, making sure not to overcrowd the skillet. Cook undisturbed for about 5-6 minutes.
  7. Using tongs, flip the chicken thighs and cook for an additional 5-7 minutes until they reach an internal temperature of 165°F.
  8. Transfer the chicken to a cutting board and let it rest for 3-4 minutes. Slice against the grain into strips.
  9. Garnish with fresh parsley and serve hot.

Marinating the chicken enhances the flavor, and it pairs well with hummus, pita bread, and salads.
