Description
A quick and indulgent pasta dish featuring crispy pancetta, sweet peas, and a rich creamy sauce.
Ingredients
Scale
- 6 oz pancetta, diced
- 1 cup pasta (like fettuccine or penne)
- 1 cup peas (fresh or frozen)
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Boil the pasta according to package instructions until al dente, then drain and set aside.
- Sauté the pancetta: In a large skillet, heat olive oil over medium heat. Add the diced pancetta and cook until it turns crispy.
- Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to let it burn.
- Incorporate peas: Add the peas to the skillet and cook for an additional 2-3 minutes until they’re heated through.
- Make the sauce: Pour in the heavy cream and bring the mixture to a simmer. Stir in the grated parmesan cheese and mix until melted and well-combined.
- Season: Taste and season with salt and pepper as desired.
- Combine with pasta: Toss the cooked pasta into the skillet, mixing thoroughly to coat it with the creamy sauce.
- Garnish and serve: Plate your pasta and garnish with freshly chopped parsley before serving immediately.
Notes
For a lighter option, you can substitute pancetta with bacon or turkey bacon. Consider using half-and-half or a non-dairy alternative instead of heavy cream.
