Description

Ingredients

  • 1 pound sausage (Italian recommended)
  • 2 medium zucchinis, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Toss in the diced zucchini, followed by the chicken broth and canned tomatoes.
