Description

A comforting dish that combines savory ground sausage with the earthy sweetness of roasted butternut squash, perfect for any occasion.


Ingredients

  • 1 large butternut squash
  • 1 pound ground sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa
  • 1/2 cup shredded cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • Olive oil (for roasting)
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Place it cut side up on a baking sheet.
  3. Drizzle with olive oil and season generously with salt and pepper.
  4. Roast the squash in the oven for about 30-35 minutes, or until the flesh is fork-tender.
  5. Cook the sausage in a skillet over medium heat, breaking it up with a spoon until browned.
  6. Add the onion and garlic, cooking until softened, about 3-4 minutes.
  7. Stir in the cooked rice or quinoa, dried thyme, sage, and cheese until well combined.
  8. Fill each half of the squash with the sausage mixture.
  9. Return to the oven and bake for an additional 10-15 minutes, until heated through and the cheese has melted.
  10. Garnish with fresh herbs before serving.

Notes

For a leaner option, turkey sausage works well, and quinoa is a gluten-free alternative to rice.
