- 1 large butternut squash
- 1 pound ground sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice or quinoa
- 1/2 cup shredded cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- Olive oil (for roasting)
- Fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds. Place it cut side up on a baking sheet.
- Drizzle with olive oil and season generously with salt and pepper.
- Roast the squash in the oven for about 30-35 minutes, or until the flesh is fork-tender.
- Cook the sausage in a skillet over medium heat, breaking it up with a spoon until browned.
- Add the onion and garlic, cooking until softened, about 3-4 minutes.
- Stir in the cooked rice or quinoa, dried thyme, sage, and cheese until well combined.
- Fill each half of the squash with the sausage mixture.
- Return to the oven and bake for an additional 10-15 minutes, until heated through and the cheese has melted.
- Garnish with fresh herbs before serving.
Notes
For a leaner option, turkey sausage works well, and quinoa is a gluten-free alternative to rice.
