Instructions
- Brown the butter: In a saucepan, melt the butter over medium heat. Continue cooking until golden brown and nutty. Let cool for 20–30 minutes.
- Preheat your oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the wet ingredients: In a bowl, combine cooled browned butter, light brown sugar, granulated sugar, and honey. Beat until creamy.
- Add the egg and flavorings: Mix in egg, vanilla extract, coarse sea salt, and baking soda.
- Incorporate the flour: Gradually stir in all-purpose flour until just combined.
- Fold in the add-ins: Gently fold in chopped pistachios and chocolate chips, if using.
- Scoop and bake: Drop dough balls onto the prepared sheet, spacing them 2 inches apart. Bake for 8–10 minutes until the edges are golden.
- Cool and garnish: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack. Sprinkle with flaked sea salt if desired.
