- 2 cups cooked cilantro lime rice
- 1 can black beans, drained and rinsed
- 1 cup pico de gallo
- 2 fillets of salmon
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Tortilla chips or tortillas for serving (optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Whisk together the olive oil, lime juice, chopped cilantro, salt, and pepper to create a mouthwatering marinade.
- Brush the salmon fillets generously with the marinade and place them on a baking sheet.
- Bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Prepare your bowls. In each bowl, start with a heaping base of cilantro lime rice.
- Layer in the black beans, then add a generous scoop of pico de gallo on the top.
- Flake the salmon into bite-sized pieces and add it atop the bowls.
- Drizzle with any leftover cilantro vinaigrette, if desired.
- Serve with tortilla chips or warm tortillas on the side for a crunchy addition.
