Description

A quick, vibrant rotisserie chicken salad combining crunchy veggies and a creamy dressing, perfect for a light meal or potluck.


Ingredients

  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup grapes, halved (or apple, diced)
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Lettuce leaves (for serving)

Instructions

  1. In a large bowl, combine the shredded rotisserie chicken, diced celery, finely chopped red onion, and halved grapes (or diced apple).
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well blended.
  3. Pour the dressing over the chicken mixture and stir thoroughly until everything is well coated.
