Ingredients

- 1 rotisserie chicken, shredded
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion, sliced carrots, chopped celery, and minced garlic. Sauté until softened, about 5-7 minutes.
- Toss in the sliced mushrooms and continue to cook for another 3-4 minutes until they release their juices.
- Pour in the chicken broth and increase the heat to bring it to a gentle simmer.
- Stir in the shredded rotisserie chicken and dried thyme. Allow the soup to simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot in bowls, and enjoy!
Notes
For a lighter version, use low-sodium chicken broth. It can also be frozen for up to 3 months.
