Description

A warm and comforting soup featuring tender rotisserie chicken and savory mushrooms, perfect for busy weeknights.


Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, sliced carrots, chopped celery, and minced garlic. Sauté until softened, about 5-7 minutes.
  3. Toss in the sliced mushrooms and continue to cook for another 3-4 minutes until they release their juices.
  4. Pour in the chicken broth and increase the heat to bring it to a gentle simmer.
  5. Stir in the shredded rotisserie chicken and dried thyme. Allow the soup to simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the soup hot in bowls, and enjoy!

Notes

For a lighter version, use low-sodium chicken broth. It can also be frozen for up to 3 months.
