Romano Chicken with Lemon Garlic Pasta

Description

Crispy Romano chicken cutlets served over zesty lemon garlic pasta, perfect for any occasion.


Ingredients

Scale
  • 1/2 lb chicken breasts (butterflied or thinly cut into cutlets)
  • Salt and pepper to taste
  • 1/2 cup finely grated Parmesan cheese or Romano cheese
  • 1 egg
  • Dry parsley
  • 1/2 cup panko bread crumbs (homemade or store-bought)
  • Oil for frying (olive oil and sunflower oil)
  • 1/2 lb linguine or spaghetti (or any preferred pasta)
  • Juice from 1 lemon (or to taste)
  • 3 cloves garlic (minced)
  • Zest from 1/4 lemon
  • 2 Tbsp butter (cold)
  • 23 Tbsp whipping cream (or to taste)
  • Salt and pepper to taste

Instructions

  1. Set out three shallow dishes: one for Parmesan cheese, one for beaten egg mixed with dry parsley, and the last for panko bread crumbs.
  2. Season your chicken cutlets with salt and pepper. Dredge them in the Parmesan cheese, dip them in the egg mixture, and then press them firmly into the panko bread crumbs, making sure they are well-coated. Shake off any excess.
  3. Heat a generous amount of olive oil in a pan over low heat. Add the chicken cutlets and cook until they are golden brown and cooked through, about 4-5 minutes per side.
  4. Cook the pasta according to package directions and then drain, reserving about 1/2 cup of the pasta water.
  5. Add the lemon juice and garlic to a large pan, along with a pinch of salt and pepper. Cook until the liquid reduces to about half.
  6. Stir in the first tablespoon of cold butter, let it melt while swirling the pan, then add another tablespoon and repeat.
  7. Mix in the whipping cream and a couple of tablespoons of the reserved pasta water until creamy.
  8. Toss in the cooked pasta, ensuring every strand is coated in that tantalizing garlic and lemon sauce.
  9. Finish by serving the crispy Romano chicken over the lemon garlic pasta, and enjoy!

Notes

For an even more flavorful pasta, consider adding sautรฉed vegetables such as spinach or cherry tomatoes.
