Description

A refreshing Roasted Cherry Yogurt Bowl featuring juicy roasted cherries and creamy Greek yogurt, perfect for breakfast or a healthy snack.

Ingredients

Scale
  • 1 pound Northwest-grown sweet cherries (about 3 cups)
  • 1 lime (juiced)
  • 2 tablespoons cane sugar
  • 1/2 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 oz plain Greek yogurt
  • 1/4 cup roasted sweet cherries (from the baking process)
  • 1/4 cup granola
  • Honey (to taste)

Instructions

  1. Preheat your oven: Set it to 400°F and line your baking sheet with parchment paper.
  2. Prepare the cherries: Pit the cherries and slice each one in half.
  3. Mix the ingredients: In a medium-sized bowl, combine the cherries, lime juice, vanilla extract, cane sugar, pinch of salt, and coconut oil.
  4. Spread and bake: Pour the mixture onto your baking sheet and bake for about 18 minutes.
  5. Cool and assemble: Allow cherries to cool for about 5 minutes before transferring them to a bowl.
  6. Layer it up: Serve the warm roasted cherries over Greek yogurt, sprinkle with granola, and drizzle with honey.
  7. Store leftovers: Transfer remaining cherries to a sealed glass container in the refrigerator for up to a week.

Notes

For variations, try adding a dash of cinnamon, mixing in tropical fruits, or substituting yogurt types.
